POTATO PIE RECIPE

So this is a great way to get rid of leftovers. Just know that if you use meat, it has to be pre-cooked. That’s why I mention cold cuts or other pre-cooked meats.

Potato Pie Recipe

9×13 aluminum pan
6 large potatoes
1 cup Italian style breadcrumbs
¼ cup garlic, either fresh minced, jarred minced or powdered
1 cup Parmesan cheese
2 cups cut or shredded mozzarella cheese
2 eggs
¼ cup parsley
¼ cup sweet basil
Salt
Pepper
Olive oil
Butter
½ cup of milk

Note: All these measurements are approximate. I usually measure everything in terms of handfuls and pinches. If you like more garlic or less garlic, more or less salt, more or less pepper, it’s all up to you. Also, you can add anything to this. My Nonna puts cut up ham and turkey with cheese in hers. If you’re going to add meat, just make sure it is cooked meat first like deli meats. You can also brown ground beef or ground turkey, drain and then add to the potato mixture.

First wash and peel the potatoes, then cut them into ¼” chunks and drop into salted pot of water. If you’re using fresh garlic, half a few cloves and drop them in the water, too. Boil the potatoes for 20-25 minutes, partially covered. Once the potatoes are tender, drain and return them to the pot. Use a potato masher or whisk to break up the potatoes and then let them cool. Preheat the oven for 350º. Take the aluminum pan and grease the bottom and sides with butter. Dust the bottom and sides of the pan with some breadcrumbs. Go back to the potatoes and add the parsley, basil, Parmesan cheese and garlic, mixing each in one at a time. Add the eggs and mix it in well. Add a liberal pinch of each salt and pepper and mix them in. Add the mozzarella cheese, little by little, and keep mixing it all in. If you add the mozzarella when the potatoes are still really hot, the cheese will melt like glue and make it tougher to mix together. Add ¾ of the rest of the breadcrumbs to the mix. It will be a very thick consistency. If the batter seems too dry, you can add a little milk to loosen it up. Then take the batter and put it in the greased pan. Spread it out like a sheet cake. Dust the top with the rest of the breadcrumbs. If you have any cheese left, you can dust that on top too. Then drizzle a little olive oil on the top. Set the oven timer for 35-40 minutes and put the pre-finished product on the middle rack. After 35-40 minutes, check to make sure the oil is evaporated and there’s a golden brown crust on top. Remove from the oven and let it cool for about 5-7 minutes. Then cut it up like brownies and enjoy.

When reheating, put on a microwavable dish and put a wet paper towel on top of it to keep it moist. Heat on high for 1:30-2 minutes. . If you reheat in the oven, put a slice on some aluminum foil and heat for 5-7 minutes at 350º.
